Southern Chili

Southern Chili

Chili is a wholly American dish with typical Mexican spices! The earliest description of chili is from San Antonio in 1828, as a way to make a little meat go a long way – with lots of chopped vegetables. It was featured at the 1893 World Fair in Chicago, and by the roaring '20s there were chili joints across the country.

Blackened Fish / Tofu

Blackened Fish / Tofu

Blackening is a traditional southern Cajun cooking technique – coating fish in a spice rub and cooked in a screaming hot, cast iron skillet, which chars the spices. Typically, the rub is a blend of paprika, thyme, garlic powder, and cayenne powder.

Eggplant Parmesan

Eggplant Parmesan

Alla Parmigiana (with Parmesan) is a typical American Italian dish made by dredging and frying veal, chicken or eggplant in a breadcrumb / Parmesan mix. Our version of eggplant Parmesan is lightened up by baking instead of frying the eggplant.
