Includes Three Delicious Recipes
Enchilada comes from the word "enchilar", meaning to season with chili. It's a traditional Mexican corn tortilla dish from the Mayan times (1000 BCE – 1697 CE) - corn tortillas are rolled around a meat and vegetable filling, then topped with a chili sauce.
Fajitas (pronounced fe-hee-tes) is a classic Tex-Mex fusion dish. Traditionally, strips of grilled meat and vegetables are wrapped in soft tortillas and served with sour cream. It is a well-balanced and fun dish for family to share - get your hands messy and dig in!
Carnitas, translated to "little meats," herald from the Mexican state of Michoacán. Boneless pork shoulder is braised in the oven, or slow cooked ahead of time until meltingly soft and tender, with sweet, citrusy oranges and a traditional spice mix. The meat is then shredded and spread on warm corn tortillas and topped with a sweet pineapple salsa, the perfect, light contrast to the flavorful and rich pork. Corn is roasted in the oven alongside the carnitas, rolled in butter and topped with savory Cotija cheese, a pinch of cayenne, and chopped cilantro.
