Jerk Chicken / Cauliflower
Jerk is a style of cooking originated from the Taíno, an Arawak people indigenous to Jamaica and the Caribbean, who later taught it to the African slaves - the meat/fish/vegetable is coated with spices and slow-roasted over an open fire or grill. The unique ingredients in the Jamaican Jerk chicken are allspice and Scotch bonnet pepper, which is similar to habañero chili pepper.
Jamaican Curry Chicken
Jamaicans call this dish, Curry Chicken to differentiate from the Indian’s “Chicken Curry.” It is an adaption of Indian and African cuisines from the settlers in Jamaica over the years. Unlike the Indian curry which has more chili powder to give it a red coloring, Jamaican curry has more turmeric which gives it a yellow coloring. Flavorful and bold, this easy curry dish will quickly become your comfort food staple!
Crispy Coconut Shrimp
Shrimp is BIG in Jamaica! Cooking them in curry sauce is the most common way of cooking shrimps in Jamaica. To mix it up, we introduce coconut shrimp which will be a hit with kids of all ages!
The origin of fried coconut shrimp is hard to pinpoint but many believed that it was likely found in the tiki bar culture in the Caribbean or Polynesian islands. In our recipe, we baked the coconut/panko coated shrimps instead of frying them for a healthier version and served them with tasty cauliflower rice!
