Singapore fried noodles
Singapore street noodles, or fried bee hoon, is a quick and ﬂavorful dish. You often ﬁnd this dish served for breakfast in Singapore! Rice noodles are soaked in boiling water and tossed with sautéed summer-fresh produce, sweet shrimp, and tossed with a savory sauce.
Okonomiyaki ("okonomi" - as you like it, "yaki" - grill) is a savory Japanese pancake, known in the USA as Japanese pizza. It is traditionally made with shredded cabbage and various meats, and is topped with condiments like scallions, red pickled ginger (kizami beni shoga) and green seaweed powder (aonori). Okonomiyaki is mainly associated with the Kansai or Hiroshima areas of Japan.
Mapo tofu (pronounced - ma po dou fu) is one of the most popular classic dishes from the Sichuan province in China. The dish was apparently named after a cook from Chengdu (capital of Sichuan province) whose face is full of pockmarks (acne scars) - "ma" stands for "ma-zi" for pockmarks. "po" stands for "popo", an old lady.
