Lomo Saltado
Lomo Saltado is a famous Peruvian stir-fry dish that originated from Chinese immigrants in Peru. Chinese Peruvian fusion cuisine in Peru is known as chifa which comes from the Chinese words “chi fan” meaning “to eat.” Chifa uses Chinese techniques (stir-fry) and ingredients (soy sauce & oyster sauce) and applies them to local ingredients (potatoes, beef loin). Lomo Saltado literally means “jumped loin” – beef tenderloin stir-fried over high flame (“jumped”) with onions and vegetables.
Papa Rellena
Who doesn’t like fried stuffed mashed potatoes? There are so many countries with their own versions of stuffed mashed potatoes - croquetas from Spain, croquettes from France, aloo tikki from India, korokke from Japan, crocchette from Italy, and of course, Papa Rellena from Peru. Papa Rellena is a great comfort food that kids of all ages will love.
Pollo a la Brasa
One of the better known Peruvian dishes in the US, Pollo a la Brasa is a roasted / rotisserie chicken packed with Peruvian flavors with influences of the Chinese and Japanese communities. The key to this recipe is the intense flavored green sauce, Aji Verde, that accompanied the roasted chicken.

I found my first 2 kits in store at Kohls. The recipes are easy to make, the food is good; the only problem I have with these is you can't really make the recipes again unless you buy the kit again, (which I will not do), as the seasonings used in the kits are made up especially for the particular kit and can't be recreated as a person needs to know the amounts of each spice that makes up the seasoning.....
We had a nice time making the recipes and they taste great. One request is that the instructions could be a little bit clearer. We found that there were a couple of places that were missing comma's and that made a difference in understanding the recipe. So maybe a little more attention to detail on the recipe cards?
We have really enjoyed using these monthly boxes to explore new tastes & learn about new countries & cultures. I was a little disappointed at the quality of several of the ingredients, though, as they contained fillers & artificial ingredients which are cheaper & less authentic. It also makes it harder when dealing with food allergies in the home.
We love this box! Once a week we cook as a family and make a meal from the months box. So far we have completed Sweden and Morocco - we just got South Korea. The recipes are delicious and start wonderful discussion in the kitchen and at the table.
Loved it, bought for my daughter, but even i enjoyed the cooking!
