Blackening is a traditional southern Cajun cooking technique - coating fish in a spice rub and cooked in a screaming hot, cast iron skillet, which chars the spices. Typically, the rub is a blend of paprika, thyme, garlic powder, and cayenne powder.

Chili is a wholly American dish with typical Mexican spices! The earliest description of chili is from San Antonio in 1828, as a way to make a little meat go a long way - with lots of chopped vegetables. It was featured at the 1893 World Fair in Chicago, and by the roaring '20s there were chili joints across the country.
