









Fish Tacos
Fish tacos are traditionally found in Baja California. "Baja California" is not part of California or the US. It is the northernmost and westernmost state of the 32 Federal entities of Mexico! "Baja California" means "lower California" - the only state that is not contiguous to Mexico because it is separated by the Sea of Cortez.
Vegetarian Chili
Chili is a wholly American dish with traditional Mexican spices. The earliest description of chili is from San Antonio in 1828, as a way to make a little meat go a long way - with lots of chopped vegetables! It was featured at the 1893 World Fair in Chicago, and by the roaring '20s there were chili joints across the country.
Chicken Cacciatore Pasta
Cacciatore means “hunter” in Italian and in the kitchen, “alla cacciatore” means a dish prepared “hunter-style” with onions, herbs, tomatoes, wine and sometimes peppers. It is a tasty stew, slowly braised to bring out the flavor of the chicken, herbs and vegetables. It is believed that chicken Cacciatore originated in Central Italy back in the Renaissance period when poultry parts were slowly cooked with vegetables that could be found in the woods.
